Pork Chops and Cauliflower Cheese

Another moderate success, mostly because I didn’t realise how long my course was, so we didn’t eat until very late and poor Mr M had got the meat ready for my expected arrival time. Oops!

I whipped up a batch of cauliflower cheese before heading out. A pretty simple bechamel sauce, as the base. Melted butter, flour mixed in and then gradually added milk, whilst heaating up to the boil. Once it was boiled I took it off the heat, added a spoonful of djion mustard and a mountain of cheese. Plenty of pepper and then it was ready to embrace the cauliflower.

Mr M finished the meal by cooking pork chops, until they had a satisfying crunchy fat rind. Sadly whilst waiting for me to return they got a little bit dry 😦  The cauliflower cheese was pretty good, but it might have benefited from slightly longer in the oven to get a good colour. Mr M voted for a 7 for this, generously praising the flavour of the cheese sauce.
