Chilli Prawns

We seem to have eaten spicy prawns every month in some guise!  These were pretty hot, even in a baguette with lettuce and sour cream.

A marinade of ancho chillies (simmered for 10 minutes to rehydrate them), raw garlic, onions, bay leaf and some Chipotles en Adobo was pulses with the blender.  This was cooked for 10 minutes before the prawns were added and fried quickly.

The smoky, hot marinade went really well with the sweet juicy prawns. 7.5 says Mr M, little sister was less enamoured but she doesn’t like the hot stuff!
