This was cheesy oozy stodgy goodness. A little bit faff was involved in assembling the chorizo based sauce. As a bad ass rule follower I had to do as Thomasina said, so I blanched and peeled tomatoes, carefully removing the seeds. The rest of the prep was pretty simple. Chopped onions were softened in oil, cooking chorizo sausages were chopped and browned. A little bit of Cumin was added.
Then the lovingly prepared tomatoes were added to the mix, and cooked until most of the moisture had left. The mix was then placed in an oven dish, and covered with a mountain of cheese and baked for ten minutes. Served with tortilla and salad.
The diners tonight really liked this, 8.5.
