After yesterday’s epic cooking session, Mr M fortunately had a quick dinner to make whilst I nipped out to Yoga.
Finely diced onions, courgettes, green chillies and corn scraped from the cob. These were pan fried until cooked. Seasoned well then served in a Taco with a generous amount of salty feta.
This was light and fresh in flavour, with the tangy creamy contrast of the feta. Yum. Yum.
