Mexico month, meatballs de Mehico

July is Mexico month, a return to spicy food and lots of dried chillies. Many of this month’s recipies are from Thomasina Myers the chef made famous by Masterchef.

First meal for this month was meatballs de Mehico, an interesting version of meatballs, quite different to those from Greek month. These combined a couple of hard boiled eggs and a raw egg, beef mince, onion, garlic, mustard, herbs and spices, rice and milk.

The mixture was cooled, rolled into balls and arranged in a large oven dish before being cooled for a little longer. This was then covered with a smoky tomato sauce mixture based on onions, garlic, tinned tomatoes and some magic chilli mixture; namely Chipotles in Adobo from a jar courtesy of the Cool Chile Co.

This all went into the oven for 40 minutes and it was done. A green salad went alongside to add up to a score of 8 out of 10.
