Cauliflower risotto

So a short post tonight and a day late.

A basic risotto mix, but with gradually added cauliflower florets providing flavour and texture. With cauliflower there must be cheese, in this case plenty of parmesan.

Mr M says 8 out of 10, surprisingly good for cauliflower, I enjoyed it too, even cold for lunch.

    Cauliflower is such a strange vegetable. Can be fantastic, can be awful. I’ve never thought of making it the main element in a risotto. I’ll try it.
