For my first two solo meals i’ve stuck with quick and easy. On Monday I cooked fusili and prepared a simple sauce. Pan fried salami, was mixed with garlic, rosemary and white wine. Once the wine reduced chopped tomatoes and green and black olives were added. Sauce met pasta and dinner was served. I liked thia, but the olives made it a bit too salty. 7 out of 10.
On Tuesday I boiled rice until almost done. Onions were sweated with garlic, herbs and courgettes. Once it was all nice and soft I added tinned tomatoes. The rice was mixed into the tomato sauce and a handful of olives added. Then I stuffed 2 and cooked them for half an hour.
Again this was nice, but I wasn’t really in the mood for stuffed peppers, although I did feel virtuous. Another 7.
