“A friend is like a four leaf clover, hard to find but lucky to have” says my fortune cookie today.
Today’s recipe comes courtesy of an old copy of Delicious magazine – February 2009 in fact. A refreshing and wholesome feeling dish with excellently crunchy strips of bamboo (from a can).
Onions and cubed aubergine were fried in sesame oil, followed by garlic and a red pepper. To this, mushrooms bamboo shoots and a mix of sauces and stock was added and job done! Super quick and tasty.
The sauce / liquid mix included: rice wine, oyster sauce, soy sauce, ketchup(!) and vegetable stock from a cube.
Much speedier than most of the Indian cuisine of last month and not spicy but still full of flavour.
