Bejewelled dinner, pomegranate chicken and rice.

Friday night so a bit of a treat. Chicken marinated for nearly a day in a mix of ginger, garlic, garam masala,  and pomegranate powder.  Then cooked in the bone in the marinade with chillies and a big splash of water. 

Once the chicken cooked,  I reduced the sauce and disappeared off to yoga to work up an appetite. When I came back Mr M had removed the bones cooked the rice and warmed it through. What a nice boy.  I finished it off with more pomegranate powder and coriander leaf before garnishing it with pomegranate.

The result? 8.5 out of 10. Tender chicken,  sauce bursting with tangy flavour and juicy seeds.  Worth the wait and simple to cook.
